Beet Goat Cheese Salad

Ingredients
- 2 beets
- 4 cups spinach
- 2 tbsp goat cheese
- 1/4 red onion sliced
- 2 tbsp balsamic vinegar
- 1/2 lemon
- salt + pepper
Directions
Preheat oven to 425 degrees. Wrap beets in foil, then bake in oven for 1 hour. Let cool, then peel the beets with a knife (you can hold the beets with a paper towel so your hands don't stain red). Once peeled, chop the beets into small blocks or thin slices. In a bowl, combine all ingredients. Toss with the balsamic vinegar and squeeze lemon juice on top!
