Blood Orange Kale Salad

Ingredients:
-1 cup kale
- 1 small blood orange
- 1 tbsp chopped basil
- 1 tsp olive oil
- 1/2 lemon
- 1 tbsp feta cheese
- 2 dates, chopped
- 1 tbsp pumpkin seeds
- salt + pepper
Directions:
Slice the orange into small chunks. In a bowl, massage the kale with the olive oil for about a minute, until the leaves are much softer. Add the rest of the ingredients, and squeeze the juice from the lemon over it. Toss the salad, and enjoy!
Tip; When you buy feta, buy the block form rather than crumbled. You can cut a square and easily crumble it with your fingers or a knife. Pre-crumbled cheeses usually have extra ingredients that act as anti-caking agents for the crumbled form, which is an unnecessary and unhealthy addition. Blocks of natural cheese are the more flavorful, tasty, and healthy way to go!
