Date Caramel Sundae

Vegan ice cream & sauce for a healthy dessert!


Date Caramel

  • 4 medjool dates - 2 tbsp maple syrup

  • 2 tbsp almond butter - 2 tbsp coconut oil

  • 1 tbsp cacao powder - 1 tbsp espresso powder (or instant coffee powder)

Raw Ice Cream

  • 2 frozen bananas

  • 2 cups frozen zucchini slices

  • 1/2 cup almond milk

  • 1 tbsp vanilla extract


For the Caramel:

Soak the pitted dates in hot water for a few minutes to soften them up. In a blender, blend all ingredients together until it's fully blended and like a sauce. Transfer to a small bowl and cover to keep warm.

For the Ice Cream:

Blend all ingredients together in a blender until smooth. In a glass, layer the ice cream and date caramel, I would do 3 layers of ice cream with 2 layers of caramel in between. top with cacao nibs!
