Feta Tomato Basil Omelette


- 2 eggs

- 1 tbsp butter

- 3 slices Canadian bacon, chopped

- 1/2 tomato, chopped

- 1/4 cup onion, chopped

- 1 tbsp feta cheese

- sprinkle of basil leaves


Melt butter onto a frying pan on medium heat. Add chopped onion and Canadian bacon pieces and sauté for 2-3 minutes, until onion is softened. Remove onion and bacon, save for later. Beat two eggs in a bowl with salt and pepper, then pour it onto the buttered pan. Let egg start to cook for 30 seconds, then sprinkle onion, bacon, tomato, feta, and basil evenly on half of the egg. Let sit for another 1-2 minutes, then flip half of the egg over all the toppings, sandwiching it. Let cook for 1 min, then flip on the other side. Let cook for 1 more minute, then transfer to a plate and enjoy!
