I love good light, protein packed breakfast before I workout in the mornings. This is one of my
go-to's before practice!
- 2 eggs
- 1 tbsp butter
- 2 slices Canadian Bacon, cut into slices
- 2 tbsp chopped onion
- handful spinach
- sprinkle of shredded pepper jack cheese
In a small bowl, crack both eggs and lightly beat them with a fork until just combined. Add a sprinkle of cheese into it. Melt the butter on a frying pan over medium high heat. Place the chopped onion and Canadian bacon slices in the pan, and sauté them for about 3 minutes, or until the onion is soft and the bacon is starting to brown. Add the spinach and stir it around for about 30 seconds, until it starts to wilt and shrink. Add the egg and cheese mixture to the pan, and move the eggs around with the rest of the ingredients scrambling it. Keep doing this for about 3 minutes, until the eggs are fully cooked and springy. Transfer to a plate, and enjoy!
