Papaya Salad


- 1 cup kale leaves

- half papaya, cubed

-1 tbsp chopped basil leaves

-1 tbsp chopped mint leaves

-1/2 lemon

-1 tsp olive oil

- sprinkle of coconut shreds


- In a bowl, massage the kale leaves and olive oil with your hands. (This makes the kale leaves more soft and less bitter in taste). After the leaves feel softer (about 1 min), add the papaya, basil, mint, and coconut shreds. Squeeze the lemon half all over the salad. Toss, and enjoy!
