Russian Pancakes "Blini" (crepe style)


- 2 cups of warm milk

- 2 cups of water

- 1 tbsp sugar

- 2 eggs

- 1/2 tsp salt

- 1/2 tsp baking soda

- 1 tsp olive oil

- 3 cups of flour


Mix all the ingredients together in a bowl. In a frying pan on medium heat, pour a little oil or butter on to ensure the pancakes don't stick. Use a ladle to spoon some batter onto the pan. Once there are bubbles forming on the top, flip the pancake and let it cook for about a minute. Both sides should be browned, and before each one make sure the pan is oiled!

You can eat these rolled up and dipped in sour cream and jam, or maple syrup!
